dark chocolate (70% cacao), finely chopped

200g

Noor Fès extra virgin olive oil, plus extra for finishing

65ml

large eggs, separated, at room temperature

Steps

1.
Set a heatproof bowl over a pot of barely simmering water, making sure the bowl doesn't touch the water. Melt the chocolate slowly, stirring occasionally, until smooth. Remove from the heat.

Pour in the Noor Fès olive oil in a slow, steady stream, whisking constantly. The mixture should turn glossy and fully combined, almost like a ganache. Set aside to cool slightly.
3.
In a separate bowl, whisk the egg yolks with half the sugar (25g) until pale and slightly thickened, about 2 minutes. Whisk a spoonful of the warm chocolate mixture into the yolks to temper them, then pour the yolk mixture back into the chocolate, whisking until smooth.

In a clean, dry bowl, whip the egg whites with the pinch of fine sea salt until foamy. Gradually add the remaining sugar (25g) and continue whipping to soft, glossy peaks. Stop before they turn stiff and dry.
5.
Fold one-third of the whipped whites into the chocolate mixture to loosen it, then gently fold in the rest in two batches. Work with a light hand and stop as soon as no streaks remain.
6.
Divide the mousse evenly among the ramekins. Cover and refrigerate for at least 3 hours, ideally overnight, until fully set.
7.
Just before serving, drizzle each ramekin with a few drops of Noor Fès olive oil and finish with a pinch of flaky sea salt. Serve straight from the fridge and enjoy !
