Whipped Ricotta with Honey and Olive Oil on Grilled Sourdough

Good ricotta whipped with a slow stream of olive oil turns into something between a cloud and a spread, light enough to melt into warm bread, sturdy enough to hold up honey and cracked pepper on top. The technique takes five minutes and pays you back twice: once when the ricotta climbs in volume and turns pale and glossy in the bowl, and again at the table when the raw olive oil hits your palate at full strength. Raw, uncooked, the olive oil gets to speak for itself: green apple and wild herb on the nose, a peppery finish pushing back against the honey's sweetness, then a flick of citrus right as you swallow. Simple food, done with actual technique, tastes like this.

Ingredients

Whole-milk ricotta

250g

Noor Fès extra virgin olive oil

3 tbsp

Fine sea salt

Thick slices sourdough bread

Honey

3 tbsp

Freshly cracked black pepper

Flaky sea salt

Steps

Drain the ricotta: If it looks wet, set it in a fine sieve lined with cheesecloth for 20–30 minutes to let excess liquid run off. Dry ricotta whips lighter and holds its shape better.

In a food processor or with a hand mixer, whip the ricotta with 3 tablespoons of the olive oil and the pinch of fine sea salt for 3 to 4 minutes, until pale, airy, and smooth. Stop as soon as it holds soft peaks.
3.
Brush the sourdough slices on both sides with the remaining olive oil. Grill on a hot pan or grill for 1 to 2 minutes per side, until well charred at the edges and warm through.
4.
Spread the whipped ricotta thickly over the warm bread, right to the crust.
5.
Drizzle generously with honey, then a final thread of olive oil. Finish with cracked black pepper and a pinch of flaky sea salt.
6.
Serve immediately, while the bread is still warm and the ricotta is cold against it.
